Red Racer Pilsner Fruit Gazpacho

Staring into the fridge there was a can of Pilsner staring back at me. I was at a loss with what to cook with it.
Naturally I pulled out my phone and messaged Pascal - he would know.
He got back to me with a few great ideas, but the one that sounded intriguing was the idea of a fruit gazpacho made with a pilsner.
11 oz Strawberries
11 oz Raspberries
5 oz Cherries
5 oz Pineapple
2 oz Honey
1 oz Simple Syrup
1 can of Central City's Red Racer Pilsner
Mint leaves (5 full leaves for blending) (3 sliced thin for topping)
Bring the can of Central City's Red Racer Pilsner and 2 cups of water to a boil (should be enough to cover fruit, add more if necessary). Add the fruit and boil for a few minutes, letting it simmer for 15 minutes and strain out the juice - reserve 1/4 cup of beer/water mixture.
Add fruit to blender or food processor and blend with fresh mint leaves, honey and simple syrup.
Strain once more with a fine strainer, you'll remove the raspberry seeds out the best you can this way, and then place in fridge for 3 hours to let it sit.
Slice remaining mint and top when ready to serve.
This made two generous portions.
